Guest Post: Some Lovely Vegan Recipes

If you are fed up with all those barbeques and meat recipes then feel free to try these new vegetarian recipes that I am going to share with you people. If you follow the vegetarian or vegan lifestyle then these recipes will surely get the chance to enter in your personal kitchen recipe collection.
The first one is “Vegetarian Mushroom Gravy Recipe”. This recipe is perfect for both the people who follow vegetarian life style and vegan life style. Of course a lot of vegan cooking art has been included here. You will need these ingredients in order to prepare the dish.
1 small yellow or white onion, minced
¼ up vegan margarine
2 ½ cups vegetable broth
2 table spoon soy sauce
¼ cup flour
1 table spoon poultry seasoning or ½ table spoon each of sage, thyme and marjoram
Salt and pepper according to taste
And last but not the least ¾ cup white or button mushrooms, chopped
Now that all the ingredients mentioned are ready, let’s start cooking. First take a frying pan and melt the vegan margarine. Now add the minced onion and chopped mushrooms and stir it properly for about a minute over high heat.
Reduce the heat to medium and add vegetable broth and soy sauce and give it a little stirring. Now slowly add flour with continuous stirring to prevent lumps formation. Again reduce the heat and add the poultry seasoning or the sage thyme and marjoram and salt and pepper according to taste with continuous stirring.
Allow to cook for about 8-10 minutes stirring regularly until the gravy thickens. Pour the gravy in a serving bowl; garnish it with some coriander leaves and enjoy.
The next one is “Black bean Vegetarian Chili”. This recipe is full of flavor and has this unique sweet spiciness of the chili flavor. Now before starting this dish, you need to collect these ingredients.
2 cloves garlic, minced
1 small onion, diced
2 small sweet potatoes, peeled and chopped
2 medium carrot, sliced
½ red bell pepper, chopped
2 table spoon olive oil
1 15 ounce can black berries
1 15 ounce diced tomatoes or tomato sauce
½ cup vegetable broth
1 table spoon chili powder
1 table spoon cumin
½ table spoon cayenne
½ table spoon garlic powder
½ table spoon salt
½ table spoon pepper
Now that the ingredients are ready, it is time for some cooking. Take a frying pan and pour the olive oil, now add the onions and garlic and give it a little bit of stirring for a minute. Then add the sweet potatoes, carrots and bell pepper and give it another stirring for about 5-6 minutes.
Reduce the heat and then add the remaining ingredients with continuous stirring to combine them well. Simmer with partially covered and stir it occasionally until the flavors mingles and the vegetable are cooked. And that’s it your Black bean Vegetarian Chili is ready to serve.
Another one is “Curried Tofu Scramble with Spinach”. Now this dish is really spicy because this one is inspired by the flavors of India. Before starting you need to collect these ingredients.
1 table spoon olive oil
1 onion, diced
3 cloves garlic, minced
1 container firm or extra firm tofu, pressed and crumbled
1 table spoon curry powder
½ table spoon turmeric
½ table spoon cumin
2 tomatoes diced
1 bunch fresh spinach
Salt and pepper according to taste
First take a frying pan and pour the olive oil, now add the diced onion and stir it continuously for about 2 minutes until the onion turns soft. Now add the remaining ingredients except spinach and cook it for another 5 minutes or so until the tofu is hot and cooked with some stirring occasionally. You can add extra olive oil if is needed.
Finally add the spinach and cook for another minute or two until it is wilted. Give it another stirring and now your dish is ready. If possible you might want to add the “Garam Masala” (a mixture of Indian species) that will give a unique spicy flavor to the dish.
