Cupcakes are one of the easiest foods to transform because you can use all-natural foods rich in vitamins and fiber without them even knowing. Here are just some ways you can make healthy cupcakes your children are sure to enjoy.
Pumpkin Cupcakes

Pumpkin recipes are a great way to enjoy fall and these cupcakes are both healthy and fun to make. These mini cupcakes use a basic cake mix with fresh pumpkin, which is an excellent source of vitamin A for eye health, protein, fiber, beta-carotene and potassium. To make delicious, healthy pumpkin cupcakes, whisk together 1 cup pure pumpkin puree, half a cup of coconut, almond or soy milk, two egg whites, half a cup of oil, half a cup of honey and 1 teaspoon vanilla extract. In a separate bowl, combine 2 cups of flour (whole wheat is best), a pinch of salt, 1 teaspoon baking soda, between 1 and 2 teaspoons of cinnamon, 1/2 teaspoon ginger and 1/4 teaspoon ground cloves. Whisk the flour mixture into the pumpkin and pour into cupcake tins. Bake for 15 to 20 minutes at 350.
To make the frosting, whisk together 1/4 cup unsweetened applesauce, 1/4 cup honey, 1/2 cup unsweetened cocoa powder and 1/2 cup pumpkin puree. Spread frosting on cupcakes when they’re completely cool. This is the step most kids enjoy the most!
Pink Raspberry Swirl Cupcakes

The raspberry in these cupcakes combined with the lemon cake perfectly mask the taste of the whole wheat — a perfect way to introduce healthy foods to your kids. It also uses artificial sugar so your kids aren’t getting too many empty calories and a sugar buzz afterwards. To make them, start by pureeing 2 cups of raspberries with 1 teaspoon of sugar in a blender. Strain into a bowl and press down with a spatula to extract, discarding any seeds.
Whisk together 2/3 cup flour (whole-wheat flour, found in the bulk section), 2/3 cup cake flour, 1 and a half teaspoons of baking powder, 1/2 baking soda and a pinch of salt in a bowl. In a large bowl, beat together 3/4 cup Splenda and 1/4 cup oil. Stir in 2 eggs, 1 to 2 teaspoons of vanilla extract and 1 teaspoon of grated lemon zest. As you mix the ingredients on low, slowly add the flour mixture and 1/2 cup non-fat buttermilk slowly.
Half fill the cupcake tins, add a small spoonful of raspberry puree and top with more batter. Use a toothpick to swirl the raspberry into the batter. Bake for approximately 23 minutes at 350 degrees F.

Vegan Carrot Cake
This is another simple cake to make. The only part of the preparation where you will have a hard time is the carrot grating. But, it is not difficult enough to discourage people to prepare such delicious cake. The subtle coconut, juicy raisins, and the walnuts when combined would certainly never fail to give you a mouthwatering crunch. Putting some icing on top is not that necessary anymore since the carrots alone already provide enough sweetness. Other ingredients would include canola oil, orange juice, cinnamon, white and brown sugar, baking powder and soda, salt and white flour.
Vegan Upside-Down Dump Cake
This cake does not require much preparation. You just have to prepare all the ingredients and dump everything into the cake pan and wait for 25 minutes. Since you are vegan, make sure that you use a Vegan Cake mix such as the Duncan Hines. You need to have crushed pineapples that are left undrained, blueberry fruit pie filling, yellow cake mix, vegan margarine, walnuts and brown sugar. Dump the pie filling and the pineapple in a greased pan. This must be followed immediately with the cake mix and then drizzle on top of your cake mix the vegan margarine. Lastly, sprinkle your nuts and your brown sugar.
Vegan Raspberry Mocha Cake
This cake will definitely go well with any occasion. Non vegans will not be able to tell that it is egg free, dairy free and completely vegan due to its mouthwatering and delicious taste. Most of all, this cake will serve as a perfect treat for coffee lovers out there. If you have plans of baking it yourself just prepare your flour, sugar, baking soda, oil, cocoa, vanilla, brewed coffee and raspberry preserves.
Vegan Soda Cake
Forget about your measuring cups and cracking several eggs into your cake mix. This Vegan Soda Cake is low-fat and absolutely cholesterol-free! Just prepare your cake mix and your bottle of soda. Mix these into your bowl and pour it into your greased cake pan. Make sure as well to follow the instructions on your cake mix box. Wait for 25 minutes and be ready to indulge!
Vegan Yellow Cake
This vegan Yellow Cake is so light compared to other vegan cakes. You can serve this cake on any occasions. You will only need sugar, softened vegan margarine, egg replacer, baking powder, soy milk and flour. After baking for thirty minutes, you can have it frosted with your desired vegan frosting.
