The Discover-E Web Series will teach avid home cooks easy ways to do Neo-Filipino dishes which they can prepare and enjoy in their own kitchen. Chef Bruce Lim and Chef Rosebud Benitez, Electrolux’s celebrity chefs, will showcase the delicacies of different regions of the Philippines per episode through these instructional 10-minute YouTube videos. The two chefs will be presenting their own recipes and will teach viewers how to turn ordinary and traditional Filipino dishes to 5-star restaurant dishes http://www.youtube.com/ElectroluxPH1.

{Press Release} Sentro’s Sinigang na Corned Beef: A Tribute to Ten Years

With a little imagination, fresh ingredients, and the right kind of meat, Sentro 1771 was not only able to make a unique spin on Filipinos’ ultimate comfort food– it’s a signature as dish certified every balikbayan’s favorite!

A brainchild of Executive Chef Vicky Rose Pacheco of Chateau 1771 Group of Restaurants, sinigang na corned beef is possibly the most creative take on the usual sinigang that everyone knows. In the Philippines where a full roster of vegetables and high quality meats are in play, cooking up anything is practically always in season for chefs. But there’s something so charming about an accidental dish, especially if it turns out to be quite historic. It’s like cooking at home, making sure each ingredient works from the little scraps and pieces and turn it into another dish you can call deliciously your own.

Like sinigang na corned beef, it’s one of the dishes that’s considered very special for its monumental discovery. While ever busy in the kitchen and thinking then of putting into good use excess corned beef broth from the first menu of Chateau 1771 then in El Pueblo, Ortigas Center, Pasig City, Chef Vicky came up with an idea: why not make the corned beef broth into sinigang soup?  All it needed was souring ingredient and the usual beef brisket could be substituted with beef cuts with sinews, fat and bones—these are what makes for a hearty soup. Well, the result is history, the dish not only came out to be Sentro’s signature favorite, it’s a heartwarming soup, flavorful and meaty, exactly what one craves for.

Many have come to try emulating and reinventing it, but Sentro’s sinigang is the only stand out original especially for its rounded flavor. Although this recipe is accidental by nature, it was never a recipe by chance. Chef Vicky’s consistent and meticulous choice of ingredients is the way she starts everything in all her restaurants, particularly with the meat as the major element of the dish. The beef is exclusively sourced from a mix of local suppliers trusted for ten years. Plus, the pot is loaded with vegetables such as tomatoes, okra, taro corms (gabi), daikon (labanos), water spinach (kangkong), and eggplant stewed in tamarind, served hot and steamy. The broth from scratch is loaded with flavor-boosting natural spices and guests are asked to sip the delicate soup stock prior serving so the sourness, saltiness, and spiciness can be adjusted according to preference–another personalized approach that this dish had built  a reputation on.

And no matter what the main ingredients are, the exciting part comes when it’s served. If there was a version that will elicit either string of exciting mmmmm’s and aaaaah’s, this is it. Sinigang na corned beef has a certain magic especially with plain rice that even foreign visitors find comforting.

Executive Chef Vicky proved that there’s more to Filipino food, especially if it’s reinvented with fresh ingredients which give that unique but homey experience. If you’ve been craving with something like this or your curiosity has been piqued, there’s no other better time than now to get to know this decade-old dish which can only originally be found in Sentro.

SM Foodcourt Dasmariñas Gets a Facelift!

{Sorry for not inserting personal shots, every single photo on my tab got corrupted. *sigh*}

SM Foodcourt brings so much memories to me. It has been there as far as I can remember and I can still vividly remember how my college friends and I would share on so many dishes during lunch and it was in SM Bacoor too where I developed my love for Sizzling Plate (which I learned recently that it’s owned by Mr. Hans Sy that’s why it is present in all SM Malls).

Anyway, after  serving Filipino families with good food and memories since 1976, SM Food Court gets a facelift! It is geared towards the improvement of its facilities, services and food.

In 2004, the SM Dasmariñas was built so it really needs some freshing up to adapt to the modern changes.

In a matter of 30 days, SM Foodcourt Dasmariñas got its well deserved facelift and soon right after, the management saw the increase in sales as a result of the renovation.

Currently there are 5 tenants and in December, they are expecting that 8 out of 10 slots will get filled. They have a long line of applicants though they are very keen in choosing the best ones that their Filipino and non-Filipino customers will surely appreciate and support.

In 2011, the SM Dasmariñas Annex was built to cater the upscale market and absorb the BPO clientele. And in 2012, a 7-story car park building will be built at the back with over 400 leasable units. The mall will receive a mall-wide facelifting in 2013.

Currently SM Foodcourt Dasmariñas is evolving to cater not just the masses but also the upscale market with its new interiors, lighting and new international concepts.

Electrolux’s highly anticipated cooking competition is back once again on its 3rd year as it searches for the Wok-a-holic Kitchen Star! 14 aspiring chefs have been selected to undergo a Culinary Boot Camp featuring celebrity chef mentors: Chef Bruce Lim, Chef Rosebud Benitez and Chef Jonathan Bautista of CCA. Then these 14 will battle it out in an exciting Cook-Off where one of them will win the title of Electrolux Wok-a-holic Kitchen Star.

Under the mentorship of the three celebrity chefs, the Top 14 will be trained in various cooking techniques during the 2-day Wok-a-holic Boot Camp in Waltermart North Edsa on June 29 and 30. Lessons include everything from handling appliances and cookware to food preparation and presentation. After which the finalists must complete challenges to test their knowledge on what they learned during the sessions.

The 14 contenders chosen were Catherine Blas, Tara Cagadoc, Maria Cristina Castro, Maria Chelo Sobremisana, Belinda Custodio, John Mark Dalucio, Roland Jonas Ferrer, Richard Lucenada, Rommel Marcos, Rigette Osoteo, Rosarie Peñaflor, Mariela Salcedo, Lorenza Nerissa Sarza-Quintos, and Georgia Shirar. As an added twist, they will have official Wok-a-holic Blogger Partners to help them campaign for the People’s Choice Award.

The winners will be announced during the Grand Cook Off at Cash and Carry Makati on July 7 and 8. At the end of the kitchen battle, only one will emerge as the Wok-A-Holic Kitchen Star taking home the grand prize of a culinary scholarship from CCA Manila, an Electrolux kitchen showcase and gifts from this year’s Wok-a-holic partners.
